Spicy and smokey chicken with chipotle peppers in adobo sauce. A little bit similar to the chicken from the burritos at Chipotle.

Ingredients
- 4 Chicken Thighs
- 2 Cloves of garlic, minced
- 1/2 Onion, sliced thin
- 1 Chipotle pepper in adobo sauce + ~1 1/2 Tbsp of the sauce
- 1/2 Tbsp Soy Sauce
- 1/2 Tbsp Rice Vinegar
- 1/2 Tbsp salt
- 1 tsp pepper
- 1 tsp cumin
- 1 tsp oregano
- Torn cilantro leaves
Directions
- Cut chicken into 3/4 inch pieces
- Mince the adobo pepper very fine.
- Marinate chicken for ~10 minutes with chipotle pepper and adobo sauce, garlic, soy sauce, rice vinegar, salt, pepper, cumin, oregano, and 1 Tbsp of oil.
- Heat pan on high heat
- When pan is sufficiently heated, add chicken and onion and press into bottom of pan to ensure the first side browns well.
- Before the chicken burns, stir it around so that the other side cooks.
- When chicken is fully cooked, add cilantro and stir to incorporate.
- Remove from pan and serve.
